2019 Valpolicella Classico Ripasso DOC “Sottolago”
Villa Bellini likes to describe their Ripasso “Sottolago” (meaning under the lake) as a synthesis of terroir and technique. Indeed, nothing of the Brolo vineyard is lost in this succulent, rich and elegant wine. The wine certainly reflects the art of grape drying from the Amarone on whose bed of lees the “Ripasso” undertakes. However, it honestly is such a powerful contradiction to the restraint of their “Teatrino” yet manages to capture the characteristics of the vineyard. A very serious example of a traditional Valpolicella Ripasso.

Vinification:
Once Amarone fermentation is over and the tank is racked, the previously made Valpolicella Superiore is added on to the Amarone lees for the second fermentation (ripasso). The wine then matures in barrel (50 hl) and bottle for a minimum of two years before release.
Tasting:
Notes of ripe red fruit accompanies fresh notes of dark spice and forest floor. The wine is full-bodied with dark rich berries and spice on the palate, a long and surprisingly dry, elegant finish.
Try with:
Full-flavoured or aromatic cheese (salty or blue cheese) legume soups; fresh or filled pasta and pasta dishes with meat sauces; grilled red meats and game; salami and charcuterie with intense flavours.
