As a testament to the structure of his “Capotesta”, Mattia lead us through a back vintage tasting, with the oldest being 2009. He clearly has faith in his wine’s structure especially for a fresh white wine! It’s a powerful fresh white where elegance with complexity meet. The key here is more with less. Don’t mess around with high quality fruit – let the vineyards speak to the palate. We love that kind of restraint in winemaking and that trust in the vineyard.
The fruit is hand harvested and then triaged both in the vineyard and winery. The wine goes through a short fermentation process using indigenous yeasts and remains on fine lees until the spring in stainless steel. This is about as low intervention as you can get!

Vinification:
Soft press of whole grapes and must fermentation with selected indigenous yeasts at a controlled temperature and maintenance on fine lees, until late spring.
Tasting:
The 2022 has bright straw-yellow and greenish hues, with golden reflections. This wine has a floral bouquet that also develops mineral notes to then flow into a dry and savory taste with an almond aftertaste.
Try with:
Pleasant on its own as an aperitif, mixed tagliere or with lake fish.

Savory and salty on the nose with notes of lily, citrus pith, almond and Bosc pear. Mouth-watering, textured, mineral-driven and lean on the palate. This is a wine for those looking for a lean, crisp and salty white wine. 90 points Wine Enthusiast
