2021 Soave Superiore “Recorbian”
Franchetto’s approach to their Soave Superiore is what really sets them apart from others in the appellation. Rather than use wood or blend other grape varietals to achieve weight and roundness to their wine the choice is to let the vineyards speak with their own voice. The Soave Superiore is a selection of their best Garganega picked by hand from late September to late October. Depending on the vintage, up to 30% of the Garganega bunches are left to ripen a little longer under the mild October sun which contributes aromatics and a powerful viscosity to the wine’s character. It’s a wine with great structure and rich in minerality, strongly representative of the volcanic hills of Terrossa and Ronca. Patience is the key as the Soave Superiore is brought to life after allowing it to rest in the cellar, in steel tanks, for up to 2 years. It offers excellent persistence at the same time elegant complexity. It’s been considered one of the top white wines ever produced in the Veneto.

Rich straw yellow with green shimmer. Very clear nose with pronounced notes of peach and apricot, some sage in the background. Beautiful play on the palate, juicy peach fruit, plus white melon, salty and with a long finish. 94 points Falstaff

Vinification:
The grapes are destemmed and crushed. Soft pressing. Fermentation in stainless steel tanks at controlled temperatures with natural yeasts. One year of aging in stainless steel tanks and another year of aging in the bottle before to go in the market. The 30% of the Garganega grapes are picked-up 3-4 weeks later in order to have a more complex aroma.
Tasting:
The 2021 is shining straw in colour with golden reflections. It is a dynamic balance between the ‘sweetness’ of tropical fruit and firm yet engaging minerality. The palate is rich in its structure but is supported by freshness and tree fruit flavours.
Try with:
Excellent with first courses such as risotto and pasta al forno with vegetables.
Well paired with white meat main courses and not too rich red meat dishes. It is also well paired with spicy meats such as the soppressa veneta. In addition, it is well paired with semi-matured cheese varieties such as the Monte Veronese DOP mezzano.
