2021 Etna Rosso “Clo”
Clos is from a meticulous selection of the best Nerello Mascalese and Nerello Cappuccio grapes grown in Milo’s Contrada Salice. Both are hand-harvested during the second half of October. The perfect exposure of the terraces, medium texture lava soil, and broad temperature range create ideal conditions to fully ripen the grapes. After temperature-controlled vinification, the wine matures in stainless steel tanks and French oak tonneaux for eight months and then ages additional 8 months in the bottle.

Vinification:
Hand harvested, destemmed grapes, fermentation for at least 15 days followed by aging in stainless steel tanks as well as Tonneaux for a minimum of 8 months.
Tasting:
Recognizable notes of cherry, underbrush, pomegranate, hints of graphite and sweet spices. Loads of aromatic herbs and typical mineral notes of the volcanic soil are evident. It has lovely medium weight and a judicious use of wood.
Try with:
Tagliere, seafood stew, risotto and fresh pasta. Extremely versatile in terms of pairing.
